Laktik Asit Bakterilerinin Probiyotik Olarak Kullanımı

Abstract


Günümüzde fonksiyonel gıdalara olan ilgi giderek artmaktadır. İnsanlar probiyotikleri genel sağlık koşullarını desteklemek amacıyla kullanmaktadırlar. Laktik asit bakterilerinin doğal asit toleransı, gastrik yolda yaşayabilme kabiliyetleri, insan tüketimi sırasındaki güvenilirlik kayıtları, hedef lokasyonlara ve dokulara etkili olarak ulaşmaları evrensel probiyotik kriterler açısından önemli olan bazı anahtar özellikleridir. Son yıllarda yapılan araştırmalar sağlıklı bir yaşam sürdürmek ve vücut direncini arttırmak amacıyla probiyotik ürün tüketimini önermektedir. Bu nedenle probiyotik kültürlerin izolasyonu ve etkin özelliklerinin belirlenmesi oldukça önemli olmaktadır. Etki mekanizmalarının anlaşılabilmesi için in vitro ve in vivo çalışmalara, özellikle de insanları içeren denemeler neticesinde elde edilecek olan istatistik açıdan anlamlı verilere ihtiyaç duyulmaktadır.
