Gıdalardaki Ağır Metal Kontaminasyonları: Güncel Bakış

Abstract


Ağır metaller, periyodik cetvelin üçüncü ya da daha yüksek periyodunda bulunan ve fiziksel özellik açısından yoğunluğu 5 g/cm3'ten daha yüksek olan metaller için kullanılan bir terimdir. Ağır metaller çok çeşitli kaynaklardan ortaya çıkabilmeleri, yaygın kirlenme nedeni oluşturmaları, çevre koşullarına dayanıklı olmaları, daima biyolojik sistemlere yönelik etki göstermeleri ve kolaylıkla besin zincirine girerek canlılarda artan yoğunluklarda birikebilmeleri nedeniyle diğer kimyasal kirleticiler arasında ayrı bir önem taşımaktadırlar. Birçok ağır metal; toprak, toprak ıslah maddeleri, lağım ve endüstriyel atıklar, içme suları, pişirme ve işleme ekipmanları, seramik ürünler, paketleme-kutulama aşamaları gibi kaynaklardan bulaşarak sağlığımızı her geçen gün artan bir risk ile tehdit etmektedirler. Ağır metal kontaminasyonun önlenmesi amacı ile ulusal ve uluslararası alanda yapılan bazı yasal düzenlemeler mevcuttur. Bu derlemede, insan sağlığı ile olumsuz etkileşimde olan bazı ağır metaller, gıdalara bulaşma yolları ve kaynakları tartışılacak olup ilgili ulusal-uluslararası yasal düzenlemelerden kısaca bahsedilecektir.
