Araştırma Laboratuvarından Meksika Mutfağına: Ustilago maydis

Abstract


Ustilago maydis DC (Corda), mısır bitkisinin topraküstü organlarında özellikle koçanlarda ‘‘gal (ur)’’ adı verilen şişkinlikler oluşturan, mısırın verim ve kalitesini azaltan bir bitki patojenidir. Buna karşılık, kültüre alınabilmesi ve karmaşık hayat çemberiyle araştırma laboratuvarlarında genetik çalışmalar için model organizma olarak kullanılmaktadır. Ayrıca, fungusun mısır koçanlarında oluşturduğu rastık galleri Meksika ve Latin Amerika’ da Aztekler zamanından beri çok sevilen bir gıda olarak tüketilmektedir. Meksika’ da ‘’huitlacoche’’ veya ‘’cuitlacoche’’ olarak isimlendirilen rastık galleri, ‘’mısır mantarı’’, ‘’Meksikan trüfü’’, ve ‘’maizteka’’ gibi isimlerle de bilinmektedir. Bu derleme, mısır rastık fungusunun detaylı olarak ortaya konulması ve fungusun oluşturduğu gallerin Dünya’da özellikle gıda olarak değerlendirilmesi noktasında farkındalık yaratılması amacı ile hazırlanmıştır.
